Talk to the Apple Merchant, buy 100 apples (you also can buy apples from Fruit Merchant and bring them with you), then talk to the scientist. He'll use them to gamble another round and lose even more. The key here is his swearing his luck on Ymir's Heart. Each time he loses, buy another 100 apples and try again; eventually, he will win and tell you about Ymir's Heart.
